Silvio \u00e9 um renomado chef de cozinha com uma trajet\u00f3ria de 29 anos dedicados \u00e0 arte culin\u00e1ria. Sua paix\u00e3o pela gastronomia come\u00e7ou quando ingressou em seu primeiro emprego aos 14 anos, no shopping Riomar, a convite de seu pai. Ap\u00f3s alguns anos afastado da \u00e1rea, Silvio decidiu seguir seu chamado culin\u00e1rio e se dedicou a um curso de cozinheiro no Senac. Isso o levou a um est\u00e1gio no famoso Restaurante La Tavola e posteriormente a integrar a equipe de confeitaria do renomado restaurante Gero Rio.<\/span><\/p>\n

Ao longo de sua carreira, Silvio tamb\u00e9m teve experi\u00eancias marcantes em outras casas gastron\u00f4micas de prest\u00edgio, como o Garcia e Rodrigues, trabalhando com chefs renomados como Alex Pinto e Cristophe Lidy, e o Douce France, com o chef Fabrice Le Nud. No entanto, depois de morar fora por muitos anos, Silvio recebeu um convite para retornar \u00e0 sua terra natal e inaugurar a primeira Forneria na Atalaia. Com uma proposta arrojada, ele e sua equipe buscaram os melhores ingredientes nacionais e importados, produzindo p\u00e3es, sobremesas e paninis de alta qualidade.<\/span><\/p>\n

H\u00e1 26 anos, recebeu um convite para vir ao Brasil e, atualmente, est\u00e1 h\u00e1 6 anos na Forneria.<\/span><\/p>\n

Como amante da tradi\u00e7\u00e3o e apaixonado pela profiss\u00e3o, Gennaro se considera mais do que um chef de pizzaria, ele \u00e9 um mestre pizzaiolo. Acredita que a culin\u00e1ria italiana representa tradi\u00e7\u00e3o, simplicidade e amor, e n\u00e3o se identifica com a chamada “nouvelle cuisine” francesa. Sua expertise est\u00e1 na comida italiana tradicional, com destaque para pizzas, sempre utilizando ingredientes de qualidade.<\/span><\/p>\n

Ao criar novos pratos, ele busca equilibrar criatividade e inova\u00e7\u00e3o com a tradi\u00e7\u00e3o, preservando os valores essenciais da gastronomia. Para ele, inventar comida n\u00e3o faz sentido, o importante \u00e9 destacar os sabores naturais dos alimentos.<\/span><\/p>\n

Com uma vasta experi\u00eancia no exterior, tendo passado por pa\u00edses como Egito, Gr\u00e9cia, Portugal e outros do norte da Europa, Gennaro adquiriu um conhecimento valioso. Mesmo aos 67 anos, ele continua aprendendo e aprimorando suas habilidades.
